Egg Quesadillas
Ingredients:

2 (8 inch) tortillas

1/2 cup egg substitute

A pinch of pepper

2 slices of tomato

1 slice of low-fat cheese
-
2 slices of onion (optional)
Directions:
Preheat oven to 375°F (180°C). Prepare scrambled eggs in a small frying pan.
Place a tortilla on a non-stick tray. Put the scrambled eggs on the tortilla. If you want, place the tomato, cheese and onion on top.
Cover with the second tortilla and press gently.
Bake for 5 minutes or until the cheese melts. Cut into 4 pieces and serve.
