White Bean Salad
Ingredients:
4 cups cooked white beans, at room temperature
2 tablespoons lemon juice
¼ cup olive oil
1 tablespoon red onion, finely chopped
2 tablespoons parsley, finely chopped
1 pinch salt
Pepper to taste
½ cup cherry tomatoes cut into wedges
Directions:
Serves 4.
In a bowl, place the lemon juice and slowly add the olive oil, whipping constantly to mix together. Add the onion and parsley; season with salt and pepper. To serve, add the vinaigrette to the white beans, and finally add the cherry tomatoes.
