Pumpkin Cheesecake
Ingredients:
Crust:
- 2 cups Graham crackers, crushed
- ½ teaspoon ground cinnamon
- ½ teaspoon ginger, crushed
- ½ teaspoon nutmeg
- 1 ounce pecans, chopped
- 4 tablespoons low-fat plain yogurt
Filling:
- 2 cups low fat cream cheese
- 2 cups maple syrup
- ½ cups sugar
- 1 egg
- 1 egg white
- ½ cup pumpkin puree
- 2 tablespoons plain yogurt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground old spice
Directions:
Preheat the oven at 325ºF.
Crushed:
In a large bowl, mix the crushed crackers, cinnamon, ginger, nutmeg and pecans. Add the yogurt. Press the mix against an 8 inch baking pan.
Filling:
Slowly whip the cream cheese, syrup and sugar. Add the egg, egg white, pumpkin puree, yogurt, ground cinnamon and old spice. Mix well and add the mixture to the crust.
Bake for about 30 minutes. Turn off the heat and leave incide the oven for an tour, until the pie is cool.
Makes 10 servings.
