Baked Eggs with Mozzarella
Ingredients:
- Non-stick cooking spray
- 1 large tomato
- 1 green onion, chopped
- 1/3 cup grated low-fat mozzarella cheese
- 1 tablespoon fresh basil
- A pinch of salt
- A pinch of pepper
- 1/3 cup plain low-fat yogurt
- 4 eggs
Directions:
Preheat oven to 375°F (190°C); spray non-stick cooking spray on 4 baking sheets. Peel and seed tomato, dice it.
Combine tomato, green onion, cheese, basil, salt and pepper in a small bowl. Divide the mixture into 4 bowls.
In a double boiler, heat the yogurt and pour over the tomato mixture. Break an egg into each bowl.
Put bowls in a pot, add enough boiling water so that it reaches 2/3 of the bowls. Bake for 10-15 minutes until eggs are cooked. Serve.

- To peel the tomatoes, cut an X on the bottom and place them in boiling water for 1 minute or until the skin separates at the cut. Immediately afterwards, put them in a bowl of iced water and let them cool. Proceed to peel them as soon as you can handle them.
